New Hotel Mertens Restaurant

This exciting project involved the transformation of an existing space into a new French brasserie-style restaurant. The site was formerly a hotel, first opened in 1914. Although the space was to be completely transformed, elements of the hotel’s history were to stay intact, such as the original brick lining around the windows and the tiled floor. Existing elements were left bare and rough, contrasted by new elements which are refined and polished. Furniture and other design elements were meticulously chosen to match the theme and ambiance.

The layout includes a pastry and coffee counter, as well as a long bar that invites guests to take a seat. The space also includes street-facing seats, a waiting area, and a main dining area.
